Milk protein contains 3.3% of total protein. Milk proteins comprise 9 essential amino acids needed by humans. Milk proteins are synthesized in the mammary gland, but 60% of the amino acids used to make proteins come from cow's diet. The total protein of milk and the composition of amino acids differ depending on the breed of cows and the genetics of the animals. The use of premixed powders of various types of milk protein in dairy products may, in addition to improving the nutritional impacts, provide appropriate textural and rheological properties in the final product.
