Phosphorus is one of the most important substances in our environment, which is naturally present in water and food. Phosphorus is absorbed in all organisms as phosphate ions. Phosphate is a natural and vital compound existing in every food and is formed when all or part of the hydrogen of phosphoric acid replaces metals such as sodium, potassium, etc. Orthophosphates and pyrophosphates, as additives, have positive effects on food applications. Although these substances are buffers, they are antibacterial, natural nutrient sources, and separators of unwanted metal ions. Phosphates are generally used as preservatives, in the best form and in sufficient quantity, for various purposes in food industry.
